Apple Chicken Pita Pocket Recipe
This refreshing chicken salad pita is perfect for lunch, a picnic or any time you want to eat something light and delicious.
Ingredients
- 3 oz. boneless, skinless chicken breast
- 1 apple, small – divided into ¼ and ½ (use remaining apple for another use)
- 1 tbsp. diced celery
- 1/8 cup pineapple chunks
- 1/8 cup grape halves
- ½ whole wheat pita pocket (6-inch diameter)
- 1 romaine lettuce leaf
- 1 tbsp. light mayonnaise
Instructions
Preheat grill. Place chicken breast on grill, cooking 5-6 minutes on each side or until center is no longer pink. While chicken breast is on grill, dice ¼ of the apple and mix with drained pineapple. After chicken breast is cooked, allow to cool slightly and dice.
Add chicken, celery and grapes to apple and pineapple mixture. Combine with light mayonnaise and chill to allow flavors to combine.
Place romaine lettuce leaf and mixture in pita pocket (you can substitute a tortilla wrap). Cut half of the apple into slices to serve alongside the apple chicken pita pocket. Bon appétit!

I tried this today and it was good however make sure you put grape tomatoes on your grocery list instead of grapes…lol I will try this again
