Fruit and Nut Breakfast Quinoa Recipe

Try this twist on breakfast cereal if you’re getting bored with the same old bowl of bran flakes.

Ingredients

  • ¼ cup 1 percent milk
  • ¼ cup water
  • ¼ cup dry quinoa, thoroughly rinsed
  • ½ cup fresh blueberries
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons chopped walnuts, lightly toasted
  • 1 teaspoon brown sugar
  • 2 pieces reduced sodium bacon slices, cooked

Instructions

In a medium saucepan, combine milk, water and well rinsed quinoa. Bring to a boil over medium high heat. Reduce heat to low; cover and simmer 10 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon and top with walnuts and brown sugar. Serve with bacon slices.
