Fruit and Nut Breakfast Quinoa Recipe
Try this twist on breakfast cereal if you’re getting bored with the same old bowl of bran flakes.
Ingredients
- ¼ cup 1 percent milk
- ¼ cup water
- ¼ cup dry quinoa, thoroughly rinsed
- ½ cup fresh blueberries
- ¼ teaspoon ground cinnamon
- 2 teaspoons chopped walnuts, lightly toasted
- 1 teaspoon brown sugar
- 2 pieces reduced sodium bacon slices, cooked
Instructions
In a medium saucepan, combine milk, water and well rinsed quinoa. Bring to a boil over medium high heat. Reduce heat to low; cover and simmer 10 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon and top with walnuts and brown sugar. Serve with bacon slices.
